Mormor Snaps

1 sprig Rosemary
1 lemon use only the peel
10 black peppers
65 % Vodka
35 % Dry Medium Sherry
1.    Mix everything together let sit for 24 hours,
2.    Remove lemon peel, rosemary and black peppar
3.    Drink!


Red Glögg (makes 3 bottles)
1 1/2 bottle red wine
1/2 bottle vodka (37 cl)
1/2 bottle Portwine  (37 cl)
1/2 bottle sugar syrup (3 dl sugar 2 dl water)
Glögg spice mixture

1.    Heat up and melt sugar with water
2.    Add booze
3.    Add glögg mixture
4.    Strain the spices before you serve it hot!

Glögg spice mixture
1 piece of Pomerance peel or 1 pinch orange peel
1 pinch dried ginger
2 whole Cinnamon Sticks
5 whole cloves
2 tsp cardemon
Mix with 1 dl port +1 dl vodka. Let sit over night

Grandma Frieda's Meatballs

6 lb ground pork
2 lb ground beef
3.5 dl breadcrumbs
5 dl heavy cream
5 egg yolk
5 boiled potatoes
1/2 bottle honey mustard
brown sugar
black peppar
3/4 bottle onion powder


1.    Boil the potatoes
2.    Soak bread crumb in heavy cream
3.    Mix bread crumb, potatoes, mustard, sugar, salt, pepper, egg yolk, onion powder.
4.    Mix ground beef with mixture, make sure it has a lot of taste
5.    Let mixture sit for a couple of hour in fridge or over night.
6.    Roll meatballs in your armpit, Make them small. Small.
7.    Fry them in a pan

Janson Temptation

10 lb potatoes
2 lb onions
2 tubes anchovies paste
1 pt + heavy cream
2-3 sticks of butter
black peppar
Bread crumbs
2 dishes 13x9x2

1.    Slice onion finely. Let caramelize in a frying pan with lots of butter.
2.    Julienne the potatoes
3.    Layer potatoes, caramelized onion, anchovies, black pepper, potatoes, caramelized onion, anchovies, black pepper end with a final layer of potatoes.
4.    Brush potatoes with melted butter. Some salt put in oven. 430 F, for about 60 minutes
5.    After 30 minutes ad the heavy cream, breadcrumbs and some dabs of butter.
Dish is done when potatoes are soft, cream is bubbling around the edges and top has a nice brown color

Ham Glaze

Brown Sugar
Bread crumbs
Mix together to a paste, spread on ham, grill in oven!

Mustard Herring (Senaps Sill)

2 dl Sweet Mustard (Honey Dijon Mustard)
1 dl white wine vinegar
1 1/2 dl vegetable oil
1 dl dill (chopped finely)
4 tbsp sugar
1 pinch ground white peppar

Mix all the ingredients together

Garlic Herring (Vitlöks Sill)

2 dl Mayonnaise
1 1/2 dl Sour Crème
1 1/2 dl Mustard
1/2 dl Dill (finely chopped)
2 clove garlic (crushed)
1 tsp Tarragon

Mix all ingredients together

Grandmas Lemmon Herring (Mormors Citron Sill)

1/2 big jar Vita Herring (in White wine sauce)
2 sliced Onions
1-2sliced leeks
Dill coarsely chopped
Lemon juice from 2 lemons
3/4 cup water
3/4 cup sugar
1 lager blad
1 tsp crushed white pepper
1 tsp allspice
10 cloves

1.    Let water boil, add sugar and spices and lemon juice let cool
2.    In a jar, layer herring, onion, leek and Dill
Strain the liquid and poor over!

Herring Salad (Sill Sallad)

1 1/2 cup Potatoes (boiled and diced)
1 1/2 cup Beets (Pickled and diced)
1 1/2 cup Pickles (diced)
1/2 cup Apple (diced)
1/4 cup onion (finely chopped)
4 tbsp Beet juice
1/2 big jar Herring (diced)
1/4 cup Sour Cream
1/2 cup Whipped heavy Cream
Salt pepper

Slice and dice it all into small pieces
mix all together
Salt and pepper to taste

Knäck (caramel)

2 dl Sugar
2 dl Heavy Cream
2 dl Maple Syrup
50 g Butter

1.    Mix sugar syrup, heavy cream and butter
2.    Let it boil on low until temp reaches 125C
Pour in small paper mini cups (knäck formar)

Chevy Chocolate Caramel (Gammeldags Kola)

3 dl heavy Cream
3 dl Sugar
2 dl Maple Syrup
3 tbsp Cocoa Powder
3 tbsp Butter
1 tbsp vinegar

1.    Mix sugar syrup, heavy cream and cocoa powder
2.    Let it boil on low until temp reaches 120C
3.    Add butter plus vinegar at the end
4.    Pour on grease parchment paper
Cut into squares before it hardens

Annika's Ginger Snaps

1 stick butter
1 cup sugar
1 egg
4 tbsp molasses
2 cups sifted flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
a dash of cardamom

1.    Bake 10-12 min at 350F
2.    Mix all ingredients together
3.    Let “rest” in fridge
4.    Make a small boll roll it in sugar
Flatten with a glass

Caramel flavored cookies (kola kakor)

This dough lends itself to food coloring
2 sticks of butter (200 g)
1 3/4 dl sugar
2 tbsp syrup
2 cups flour (5 dl)
2 tbsp vanilla extract
2 tsp baking powder

Set the oven for 350F
1.    Beat sugar and butter fluffy in the blender, add syrup
2.    Mix all dry ingredients and add to butter mixture
3.    Divide the dough into 2 pieces, work it on the table until it is hint
4.    Make four equal big rolls, put them 2 and 2 on parchment paper
5.    Bake in the middle of the oven for 13-15 minutes
Cut the cookies on the diagonal

Ginger Bread House Dough

Ginger bread dough for ginger bread house, (Pepparkaks hus)
For one house:
1 1/2 stick of butter (150 gram)
1 cup of sugar (2 1/2 dl)
1/2 cup water (1 dl)
1/4 cup syrup (1/2 dl)
1/2 tbsp ground cloves
1/2 tbsp Cinnamon
1/2 tbsp ground ginger
1/2 tbsp Baking Soda
3 3/4 cup flour (7 1/2 dl)

  1. Mix flour and baking soda in a bowlMelt butter in a pot, add water, sugar and syrup finally add the spices. Let the mixture cool before pouring it over the flour mixture.
  2. Let the dough rest in the fridge for 24 hours
  3. Roll the dough very thinly, cut out your pieces. It is easiest to roll the dough directly on the parchment paper.
  4. Bake for 420F (225C) until golden brown. Bake equal sized pieces together

Dark Bread

Poop Bread
5 dl whole wheat flour
5 dl wheat flour
1 1/2 dl rye flour
1 1/2 dl wheat bran
2 dl Oats
2 dl steelcut oats or wheat
5 tsp baking soda
1 tsp salt
1 1/2 dl syrup
1 liter butter milk
bread spices ( anis, fennel, ginger, orange peel)
1. Mix all the dry ingredients together
2. Add the butter mlk
3. pour into a greased and floured bread pan
4. bake at 350 F for 2 hour, cover the bread with foil after 1 hour

2 x 2 liter bread pan

350 F 1 hour + 1 hour covered with foil


150 g butter (1 1/2 stick)
5 dl milk (2 cups)
1 gram of Saffran
50 g Yeast
125 g kesella (cottage cheese mixed with cream)
1 1/2 dl sirap
1 large egg
1/2 tsp salt
19-20 dl flour

1.    melt butter in a pot on stove add milk until fingerwarm, 97 degree
2.    grind saffron and a sugarcube, add to fluids
3.    mix yeast with fluids
4.    add kesella, sirap, egg and salt and most of flour
5.    work the dough until not sticky
6.    let it rest and rise until twice it size (about 40 min)
7.    Work the dough, make your figures
8.    let rest and rise for 25 minutes
9.    brush with egg, add raisin
bake in oven 480 F (250 degree C) 7-8 minutes

Chinese Cole Slaw

1 red cabbage
6 green onions
2-4 pck Ramen Noodles (3oz)
1 pck slivered almonds
1/2 cup sesame seeds

1 cup olive oil
1 cup sugar
1/2 cup vinegar
2 tbsp soy sauce

1.    crush noodles
2.    roast noodles in a pan with almond and sesame seeds with olive oil.
3.    Let drain on paper towel
4.    Toss cabbage and onion with the dressing
Add the roasted mixture right before serving

Kale and Couscous Salad

1/2 cucumber
2 tomatoes
1 red peppar
1 cup of finely chopped kale
1 cup vegetable buillon
1 1/4 cup couscous (3 dl)
2 tbsp dried mint


1 dl Olive oil
4 tbsp
lemmon juice
1 tsp salt
2 pinches pepper

  1. Takes seeds out of cucumber, tomatoes and red peppar
  2. Chop them into small dices
  3. Chop kale fine
  4. Heat up bullion poor over couscous in a bowl
  5. Mix dressing and pour over couscous, then add vegetables + spieces

Gravlax Sauce

1/2 cup sweet mustard
1 cup sunflower oil
2 tbsp sugar
1 pinch salt
1 pinch peppar
1/2 cup fine chopped dill

  1. Mix together with a handblender or a whisk, mustard, sugar, salt and pepper,
  2. then add the oil by pouring it slowly in a thin stream.
  3. Lastly add the dill.


Per 1 lb of salmon
2 tbsp Salt
3 tbsp Sugar
2 pinches fresh ground white pepper
1/2 cup finely chopped dill

  1. Rub the salmon sides with the mixture
  2. put the file’s together meat side vs meat side with lots of dill in between
  3. put the file’s in a plastic bag in the fridge
  4. Turn the fish several times, it takes 1-2 days for the salmon to cure.
  5. If you want you could put some weight on top of the fish

Oven Baked Hamburger Omelette

1 lb Ground Beef (400 gram  köttfärs)
salt and pepper (salt och peppar)
2 cloves of Garlic (vitlöksklyfta(or))
1 Yellow Onion (gul lök(ar))
3 tbsp water (msk  vatten)
 1 1/2 tbsp tomatoe paste (1,5 msk  tomatpuré)
Thyme (timjan)

4  Eggs (ägg)
1 dl  Heavy Cream (grädde)
2 tbsp butter (msk  smör)
1 tsp Oregano (tsk  oregano)

2 dl shredded cheese  (riven ost)
1 dl  Heavy Cream (grädde)
0,5 dl  crème fraiche (can be substituted for sour creame with some heavy creme added to it)
10  Cocktail Tomatoes (cocktailtomater)

1. Heat the oven to 440 F (Sätt ugnen på 200 grader.)

2. Chop Onion and garlic, fry in a pan, add ground beef, and brown it. Add salt and pepper, add water, tomato paste and thyme, let it cook on low heat until water has evaporated.

(Hacka lök och vitlök och bryn i stekpanna. Tillsätt köttfärsen och bryn tills den är genomstekt. Salta och peppra. Häll i vattnet, tomatpurén och hackad färsk timjan och låt puttra tills vätskan kokat bort.)

3. Beat the egg, cream and oregano, por in a grease pan. Bake in the oven for 8-10 minutes, take out from the oven and add the filling on top . Raise the Oven Temperature to be 480 F.

(Vispa äggen med grädde och oregano och häll i en smörad gratängform.
Grädda i ugnen i cirka 8-10 min. Ta ut och lägg på fyllningen. Höj värmen till 225.)

4. Spread the meat sauce mixture on top of the baked egg mixture. Mix Heavy Creame, creme fraishe and cheese in a separate bowl, pour this mixture on top of the meat sauce mixture. Slice the cocktail tomates and sprinkle them on the top. Put everything in the oven for about 10 minutes until the cheese melts and it is nicely browned.

(Fördela köttfärsen i formen. Blanda grädde, crème fraiche och ost i en separat bunke och häll smeten över köttfärsen. Fördela skivade coctailtomater över omeletten. Grädda ca 10 minuter eller tills osten smält och den fått lite färg.)

Chickensallad with mango and sprouts

4 Chicken Breast or Tenderloins about 1/4 lb each  (4 st  kycklingfilé(er), ca 100 g styck)
2 Potatoes, boiled and chilled   (potatis kall och kokt)
1  mango(s)
1  avocado
2 Tomatoes (2 st  tomat(er))
1 small red onion (1 st  röd lök(ar), liten)
2 oz Feta cheese (50 gram  fetaost, pastöriserad)
2 slices of bread (2 skiva(or)  fullkornsbröd)
1 tbsp butter (1 msk  smör)
3 tbsp olive oil (3 msk  olivolja)
1 garlic clove (1 st  vitlöksklyfta(or))
1 lime (1 st  lime)
2 tbsp Balsamic vinegear (2 msk  balsamvinäger, vit)
salt and pepper (salt och peppar)
1 boz of Alfalfa sprouts (1 paket  alfalfagroddar)
10 black olives (10 st  svarta oliver)

1. Cut the chicken into small pieces and fry it in a frying pan with butter until all pieces are cooked through. Peele and cut the potato, mango, avocado, tomato and red onion into pieces or slices. Cube the feta cheese.

(Skär kycklingen i mindre bitar och bryn den i smör tills bitarna är genomstekta. Du kan också koka kycklingbitarna i lättsaltat vatten. Skala och skör potatis, mango, avokado, tomater och rödlök i bitar eller skivor. Dela fetaosten i kuber.)

2. Make the bread croutons by cutting the bread into cubes and fry them in the frying pan. 

(Tärna brödskivorna och stek dem frasiga i smör.)

3. Mix all the ingredients for the dressing, add chicken, potatoes and vegetables on a plate and drizzle the dressing over it. 

(Blanda ingredienserna till dressingen. Lägg upp kyckling, potatis och grönsaker på ett fat och ringla över dressingen.)

4. Decorate with the bread croutons, alfalfa sprouts and olives. 
(Dekorera med brödkrutonger, alfagroddar och de svarta oliverna.)

Shirtaki noodles with shrimp in coconutmilk

1 lb peeled shrimps (400 gram  räkor, skalade)
1/4 lb  glas noodles (100 gram  shiritakinudlar, eller glasnudlar)
1 tbsp coconut oil (1 msk  organisk kokosolja, eller rapsolja)
4 inches of leek (10 cm  purjolök(ar))
2 tbsp freshly shredded ginger (2 msk  riven färsk ingefära)
salt (salt)
2 tbsp green curry paste (2 msk  grön currypasta)
1 cup Coconut Milk Creamy kind (2,5 dl  kokosmjölk, krämig)
1 garlic clove (1 st  vitlöksklyfta(or))
1/2 lb Broccoli Crowns (200 gram  broccolibuketter)
2 oz Sugar Snap Pease (50 gram  sockerärter)
1/3 lb bean sprouts (150 gram  böngroddar)
1/4 cup Cashew Nuts (0,75 dl  cashewnötter)
1 1/2 tbsp Sesame Seeds (1,5 msk  sesamfrön)

1. Put the noodles in cold water. Chop the leek, ginger and garlick, fry in the coconut oil, add the green curry paste after a couple of minutes. 

(Blötlägg nudlarna i kallt vatten. Hacka purjolök, ingefära och vitlök. Fräs i kokosoljan och tillsätt den gröna currypastan efter några minuter.)

2. Add coconut milk, salt and the now soft noodles, add the veggies let it cook for 5 minutes, add the shrimp and let it all heat up. Serve with Cashew nuts and sesame seeds. 

(Tillsätt kokosmjölken, salt och de blötlagda nudlarna. Tillsätt grönsakerna och låt koka 5 minuter. Tillsätt räkorna och låt allt bli varmt. Servera med hackade caschewnötter och sesamfrön.)

Bean Chili

2 red onions 
3 garlic cloves
2 red bell peppers
3 tbsp oliveoil
1 can 14.8 oz Pureed Tomatoes
1 cube Vegetable Broth
3 dl cooked black beans (1 can )
3 dl cooked red beans (1 can)
1 tbsp Sambal Olek
1 dl Creme Fraiche 
1. Chop onion and garlic, cut pepper in small pieces. Heat up oil in a pot, fry onion until soft, add pepper and garlic fry for a couple of minutes

2. Mix tomatoes, Sambal Olek and vegetable broth, rinse the beans, add everything to the pot.

3. let everything cook on low heat for several minutes, add salt to taste.

4. Serve with cooked bukgur, quinoa or rice. 

Taco Burgers w/Cabbage Avacado Salad

1 lb ground beef
1/2 cup water
1 bag taco mix

1 tbsp olive oil
1 clove garlic
1/2 lemon
1 pinch dill flakes
1 lb white cabbage, or red (current favorite)
2 avacado
salt and pepper to taste

  1. Mix burger, water, taco mix, make into patties, fry in pan
  2. Cut cabbage into small pieces, cut avacado into pieces, mix w/cabbage
press garlic, add to mixture with olive oil, lemon juice, and finely grated lemon peel, salt, pepper and pinch of dill

Haddock Bake

1 lb haddock
2 tbsp olive oil
1 zucchini
1 yellow onion
2 cloves garlic
1 box cocktail tomato (also known as cherry tomatoes) 
1 bunch fresh basil
4 oz feta cheese
1/2 cup sliced almonds
salt and pepper

  1. Preheat oven to 437
  2. Put olive oil, then haddock in baking dish
  3. Cut zucchini in small pieces, chop onion and garlic. Fry onion/garlic for 5 minutes, or until translucent, add zucchini. When zucchini is soft, add basil, tomato, salt & pepper
  4. Put topping on fish, drizzle w/feta and almonds
Put in lower level of oven for 20 minutes, or until fish is done.

Squach and Apple Soup

2 1/2 lbs butternut squash (one squash or 6 cups)
2 large, sweet apples (I used Gala)
3 medium onions
2 tbsp butter
1/4 cup brown sugar
1 1/2 tbsp curry   
6 cups chicken broth
1 container of mascarpone cheese
2 tsp salt

  1. Cut and peel apples and squash, dice onions
  2. Melt butter, sauté onions, add curry, squash, apple, and brown sugar
  3. After stirring a bit, add broth and salt
  4. When soft, mix until all chunks are gone
  5. Add mascarpone and stir until dissolved

Tomatoe Soup with Lentils and Swet Potatoes

1 yellow Onion ( )
2 cloves of Garlic ( )
1 lb Sweet Potatoes (400 gram  )
1 tbsp oil (1 msk  )
1/2 red chili peppar (0,5 st  )
1 - 14.5 oz can Crushed Tomateos (500 gram  )
1/2 tsp salt (0,5 tsk  )
1/2 dl (0,5 dl  )
4 dl Coconut milk ( )
2 cubes Vetgetable bouillion ( )
3 dl Water (vatten)
Basil ()

Cooking / Tillagning

1. Chop Onion and Garlic. Peel the sweet Potatoes nd chop it into small pieces. Fry onion and gralic until soft. Take the seeds out of the chili and add. 

(Hacka lök och vitlök. Skala och skär sötpotatis i bitar. Fräs lök och vitlök i olja tills de mjukar. Finhacka urkärnad chili och tillsätt den.)

2. Add the rest of the ingredients let boil for 15 minutes or until the sweeet potatoe is soft. 

(Tillsätt resten av ingredienserna och låt koka 15 minuter.)

3. Mix the soup with your hand mixer, add salt and pepper to taste. 

(Mixa soppan slät, smaka av med lite mera salt och späd soppan med vatten om det behövs.)
