Haddock Bake

1 lb haddock
2 tbsp olive oil
1 zucchini
1 yellow onion
2 cloves garlic
1 box cocktail tomato (also known as cherry tomatoes) 
1 bunch fresh basil
4 oz feta cheese
1/2 cup sliced almonds
salt and pepper

  1. Preheat oven to 437
  2. Put olive oil, then haddock in baking dish
  3. Cut zucchini in small pieces, chop onion and garlic. Fry onion/garlic for 5 minutes, or until translucent, add zucchini. When zucchini is soft, add basil, tomato, salt & pepper
  4. Put topping on fish, drizzle w/feta and almonds
Put in lower level of oven for 20 minutes, or until fish is done.
