Mormor Snaps

1 sprig Rosemary
1 lemon use only the peel
10 black peppers
65 % Vodka
35 % Dry Medium Sherry
1.    Mix everything together let sit for 24 hours,
2.    Remove lemon peel, rosemary and black peppar
3.    Drink!

Glögg

Red Glögg (makes 3 bottles)
1 1/2 bottle red wine
1/2 bottle vodka (37 cl)
1/2 bottle Portwine  (37 cl)
1/2 bottle sugar syrup (3 dl sugar 2 dl water)
Glögg spice mixture

1.    Heat up and melt sugar with water
2.    Add booze
3.    Add glögg mixture
4.    Strain the spices before you serve it hot!

Glögg spice mixture
1 piece of Pomerance peel or 1 pinch orange peel
1 pinch dried ginger
2 whole Cinnamon Sticks
5 whole cloves
2 tsp cardemon
Mix with 1 dl port +1 dl vodka. Let sit over night

White Glögg (makes 3 bottles)
2 bottles of white wine
1/2 bottle of sherry (37 dl)
1/4 bottle of Vodka (2 dl)
4 pieces cinnamon stick
2 tbsp cardamom
1 tbsp cloves
4 pcs pommerance (orange peel)
3 dl sugar
1/2 tbsp Glögg spice mixture

Grandma Frieda's Meatballs

6 lb ground pork
2 lb ground beef
3.5 dl breadcrumbs
5 dl heavy cream
5 egg yolk
5 boiled potatoes
1/2 bottle honey mustard
brown sugar
salt
black peppar
3/4 bottle onion powder


Directions:

1.    Boil the potatoes
2.    Soak bread crumb in heavy cream
3.    Mix bread crumb, potatoes, mustard, sugar, salt, pepper, egg yolk, onion powder.
4.    Mix ground beef with mixture, make sure it has a lot of taste
5.    Let mixture sit for a couple of hour in fridge or over night.
6.    Roll meatballs in your armpit, Make them small. Small.
7.    Fry them in a pan
EAT

Janson Temptation

10 lb potatoes
2 lb onions
2 tubes anchovies paste
1 pt + heavy cream
2-3 sticks of butter
black peppar
Salt
Bread crumbs
2 dishes 13x9x2


Directions:
1.    Slice onion finely. Let caramelize in a frying pan with lots of butter.
2.    Julienne the potatoes
3.    Layer potatoes, caramelized onion, anchovies, black pepper, potatoes, caramelized onion, anchovies, black pepper end with a final layer of potatoes.
4.    Brush potatoes with melted butter. Some salt put in oven. 430 F, for about 60 minutes
5.    After 30 minutes ad the heavy cream, breadcrumbs and some dabs of butter.
Dish is done when potatoes are soft, cream is bubbling around the edges and top has a nice brown color

Ham Glaze

Brown Sugar
Mustard
Egg
Brandy
Bread crumbs
Mix together to a paste, spread on ham, grill in oven!

Mustard Herring (Senaps Sill)

2 dl Sweet Mustard (Honey Dijon Mustard)
1 dl white wine vinegar
1 1/2 dl vegetable oil
1 dl dill (chopped finely)
4 tbsp sugar
1 pinch ground white peppar

Directions:
Mix all the ingredients together

Garlic Herring (Vitlöks Sill)

2 dl Mayonnaise
1 1/2 dl Sour Crème
1 1/2 dl Mustard
1/2 dl Dill (finely chopped)
2 clove garlic (crushed)
1 tsp Tarragon

Directions:
Mix all ingredients together


Grandmas Lemmon Herring (Mormors Citron Sill)

1/2 big jar Vita Herring (in White wine sauce)
2 sliced Onions
1-2sliced leeks
Dill coarsely chopped
Lemon juice from 2 lemons
3/4 cup water
3/4 cup sugar
1 lager blad
1 tsp crushed white pepper
1 tsp allspice
10 cloves

Directions:
1.    Let water boil, add sugar and spices and lemon juice let cool
2.    In a jar, layer herring, onion, leek and Dill
Strain the liquid and poor over!

Herring Salad (Sill Sallad)

1 1/2 cup Potatoes (boiled and diced)
1 1/2 cup Beets (Pickled and diced)
1 1/2 cup Pickles (diced)
1/2 cup Apple (diced)
1/4 cup onion (finely chopped)
4 tbsp Beet juice
1/2 big jar Herring (diced)
1/4 cup Sour Cream
1/2 cup Whipped heavy Cream
Salt pepper

Directions:
Slice and dice it all into small pieces
mix all together
Salt and pepper to taste

Knäck (caramel)

2 dl Sugar
2 dl Heavy Cream
2 dl Maple Syrup
50 g Butter


Directions:
1.    Mix sugar syrup, heavy cream and butter
2.    Let it boil on low until temp reaches 125C
Pour in small paper mini cups (knäck formar)

Chevy Chocolate Caramel (Gammeldags Kola)

3 dl heavy Cream
3 dl Sugar
2 dl Maple Syrup
3 tbsp Cocoa Powder
3 tbsp Butter
1 tbsp vinegar


Directions:
1.    Mix sugar syrup, heavy cream and cocoa powder
2.    Let it boil on low until temp reaches 120C
3.    Add butter plus vinegar at the end
4.    Pour on grease parchment paper
Cut into squares before it hardens

Annika's Ginger Snaps

1 stick butter
1 cup sugar
1 egg
4 tbsp molasses
2 cups sifted flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
a dash of cardamom


Directions:
1.    Bake 10-12 min at 350F
2.    Mix all ingredients together
3.    Let “rest” in fridge
4.    Make a small boll roll it in sugar
Flatten with a glass

Caramel flavored cookies (kola kakor)

This dough lends itself to food coloring
2 sticks of butter (200 g)
1 3/4 dl sugar
2 tbsp syrup
2 cups flour (5 dl)
2 tbsp vanilla extract
2 tsp baking powder


Directions:
Set the oven for 350F
1.    Beat sugar and butter fluffy in the blender, add syrup
2.    Mix all dry ingredients and add to butter mixture
3.    Divide the dough into 2 pieces, work it on the table until it is hint
4.    Make four equal big rolls, put them 2 and 2 on parchment paper
5.    Bake in the middle of the oven for 13-15 minutes
Cut the cookies on the diagonal

(40-50 cookies)
2 sticks of butter (200 g)
1 3/4 dl sugar
2 tbsp syrup
2 cups flour (5 dl)
2 tbsp vanilla extract
2 tsp baking powder
1 tsp ground ginger



Directions:

1.    Beat sugar and butter fluffy in the blender, add syrup
2.    Mix all dry ingredients and add to butter mixture

Ginger Bread House Dough

Ginger bread dough for ginger bread house, (Pepparkaks hus)
For one house:
1 1/2 stick of butter (150 gram)
1 cup of sugar (2 1/2 dl)
1/2 cup water (1 dl)
1/4 cup syrup (1/2 dl)
1/2 tbsp ground cloves
1/2 tbsp Cinnamon
1/2 tbsp ground ginger
1/2 tbsp Baking Soda
3 3/4 cup flour (7 1/2 dl)

Directions:
  1. Mix flour and baking soda in a bowlMelt butter in a pot, add water, sugar and syrup finally add the spices. Let the mixture cool before pouring it over the flour mixture.
  2. Let the dough rest in the fridge for 24 hours
  3. Roll the dough very thinly, cut out your pieces. It is easiest to roll the dough directly on the parchment paper.
  4. Bake for 420F (225C) until golden brown. Bake equal sized pieces together

Dark Bread

Poop Bread
5 dl whole wheat flour
5 dl wheat flour
1 1/2 dl rye flour
1 1/2 dl wheat bran
2 dl Oats
2 dl steelcut oats or wheat
5 tsp baking soda
1 tsp salt
1 1/2 dl syrup
1 liter butter milk
bread spices ( anis, fennel, ginger, orange peel)
Directions:
1. Mix all the dry ingredients together
2. Add the butter mlk
3. pour into a greased and floured bread pan
4. bake at 350 F for 2 hour, cover the bread with foil after 1 hour

2 x 2 liter bread pan

350 F 1 hour + 1 hour covered with foil

Lussekattor

150 g butter (1 1/2 stick)
5 dl milk (2 cups)
1 gram of Saffran
50 g Yeast
125 g kesella (cottage cheese mixed with cream)
1 1/2 dl sirap
1 large egg
1/2 tsp salt
19-20 dl flour

1.    melt butter in a pot on stove add milk until fingerwarm, 97 degree
2.    grind saffron and a sugarcube, add to fluids
3.    mix yeast with fluids
4.    add kesella, sirap, egg and salt and most of flour
5.    work the dough until not sticky
6.    let it rest and rise until twice it size (about 40 min)
7.    Work the dough, make your figures
8.    let rest and rise for 25 minutes
9.    brush with egg, add raisin
bake in oven 480 F (250 degree C) 7-8 minutes

Chinese Cole Slaw

1 red cabbage
6 green onions
2-4 pck Ramen Noodles (3oz)
1 pck slivered almonds
1/2 cup sesame seeds


Dressing
1 cup olive oil
1 cup sugar
1/2 cup vinegar
2 tbsp soy sauce

Directions
1.    crush noodles
2.    roast noodles in a pan with almond and sesame seeds with olive oil.
3.    Let drain on paper towel
4.    Toss cabbage and onion with the dressing
Add the roasted mixture right before serving

Kale and Couscous Salad

1/2 cucumber
2 tomatoes
1 red peppar
1 cup of finely chopped kale
1 cup vegetable buillon
1 1/4 cup couscous (3 dl)
2 tbsp dried mint

Dressing

1 dl Olive oil
4 tbsp
lemmon juice
1 tsp salt
2 pinches pepper

  1. Takes seeds out of cucumber, tomatoes and red peppar
  2. Chop them into small dices
  3. Chop kale fine
  4. Heat up bullion poor over couscous in a bowl
  5. Mix dressing and pour over couscous, then add vegetables + spieces

Gravlax Sauce


1/2 cup sweet mustard
1 cup sunflower oil
2 tbsp sugar
1 pinch salt
1 pinch peppar
1/2 cup fine chopped dill

  1. Mix together with a handblender or a whisk, mustard, sugar, salt and pepper,
  2. then add the oil by pouring it slowly in a thin stream.
  3. Lastly add the dill.
