Per 1 lb of salmon
Mix
2 tbsp Salt
3 tbsp Sugar
2 pinches fresh ground white pepper
1/2 cup finely chopped dill
- Rub the salmon sides with the mixture
- put the file’s together meat side vs meat side with lots of dill in between
- put the file’s in a plastic bag in the fridge
- Turn the fish several times, it takes 1-2 days for the salmon to cure.
- If you want you could put some weight on top of the fish
