1 lb haddock
2 tbsp olive oil
1 zucchini
1 yellow onion
2 cloves garlic
1 box cocktail tomato (also known as cherry tomatoes)
1 bunch fresh basil
4 oz feta cheese
1/2 cup sliced almonds
salt and pepper
- Preheat oven to 437
- Put olive oil, then haddock in baking dish
- Cut zucchini in small pieces, chop onion and garlic. Fry onion/garlic for 5 minutes, or until translucent, add zucchini. When zucchini is soft, add basil, tomato, salt & pepper
- Put topping on fish, drizzle w/feta and almonds
